Rare Southern iron sugar cane boiler, William Glaze circa 1850

Provenance: South Carolina private collection.

Other Notes: The sugar cane boiler was an essential part of day to day life on the Southern plantation. Used primarily to boil cane juice in what was referred to as the kettle train "a row of four large open kettles," or the "Jamaican train." The four kettles were arranged from smallest to largest, as the cane juice became more concentrated it made its way down the train until it eventualy was converted to a thickened syrup.
